The question is pretty clear. When displaying info on a song in the Music App on the Mac the Lyrics tab has a check box for Custom Lyrics but checking it does not provide any way to add text. Also songs that already have custom lyrics added years ago do display the lyrics but there is no way to edit them.

Ugh. I am about to transition from using good-old iTunes 7.5 to Sequoia Music and this is exactly the kind of thing I am dreading.
I don't have a direct answer to your question since I have yet to switch on the Sequoia computer but if this really is one of those things Apple has stripped from Music then you may wish to explore the Dougscripts web site. I know there is definitely an app there I will have to buy to do some of the things Apple stripped from iTunes 10 and never replaced.
Just finding out that the ability to add or change album artwork is also non functional. And there is no recourse with Apple, no accountability or even a void to scream into
